Eremo di San Giorgio

Eremo di San Giorgio is located on the Rocca di Garda, the hill that divides the towns of Bardolino and Garda, in the province of Verona.
It was founded in 1663 and hosts a community of Camaldolese Benedictine monks. It is a place of peace and serenity dedicated to worship, where the monastic community prays, works the land and carries on traditions established over the centuries. 
Mount San Giorgio seems to have always attracted the attention of hermits and faithful, for the position and absolute peace that it seems to give. In the 16th century, the hill was inhabited by the regular clerics Teatini, followed by other hermits and private property until it came into possession of the Camaldolesi. The monks built the largest church on the remains of the ancient San Giorgio church. 
It seems almost a magical place, where time has stopped, the silence is broken only by the sounds of nature. From here you can admire the breathtaking beauty of our beloved Lake Garda.

At the foot of the hill, the farm Casetto, owns 9 hectares of vineyards, those that gave life to our company and are cultivated with great care and respect due to such an important place.  
Eremus is a project born to tell this piece of land and culture so unique. It is a red wine, an intense color IGT from Verona, homage to the same wine that monks drank already in the 13th century. 
It is made with five varieties of grapes: corvina, corvinone, rondinella, merlot and marzemino which are then processed with the same technique that monks have used for centuries.
The grapes, after being harvested, are left to rest in small plateaux for drying for at least two months, to achieve the right concentration of sugars. Then proceed with a light pressing that leads to obtain a sweet and dense must, ready for fermentation. The wine is then left to age in oak barrels for 2 years before being bottled. 

The result is a very aromatic wine, with hints of raisins, with a sweet but balanced taste with a slight bitter taste and sweet aftertaste.
